Leigh here deciding whats for dinner. Is it not the most annoying thing you do all day? O.K there are other annoyances but it can be one of them. You want everyone your cooking for to eat it-enjoy it- maybe even thank you for it. You want it to be healthy and well balanced. You do, don't you? I thought so. Oh, and one more thing, could it be easy? Yes! I say yes it can be !
So I decide on a cook out. Who's invited? Hubby John- meat and dessert lover. Daughter Victoria-vegetarian. Daughter Olivia- sugar addict- eating out advocate. Daughter Stephanie- Vegetarian. Mother in- law- happy to finally be invited over. Boyfriend of daughter Ross- eats in all the best restaurants, has restaurateurs in the family and feeds daughter frequently on date nights. I must please them all. Dialing take out immediately. No, no, I can do this.
Before I get down to the menu. Let me say this is not a gluten free, raw foods or even a organic meal. I hope I have not let you down Carolee. My excuse for not going that route would be explained in the for mentioned family members who enjoy dining out. So this is not rocket science but it worked.
Main course- Turkey and Veggie Burgers on wheat buns
Side- Broccoli Slaw- with sunflower seeds and light toasted Asian dressing (love it)
Side Corn- brush with EVOO- and herbs ( cut corn in half ) eat only half
Drink- Iced green tea with mint- add a splash of lemonade for those who need a little sweeter
Dessert- Frozen Yogurt with crushed gingersnaps- toasted pecans and a few slices of banana.
( Ice cream lovers the entire bunch )
So that's it. I am sad to report not all my invited guest came Stephanie had to work late. Boyfriend went to the lake with guy friends. ( Cannot understand it, when he could have had turkey burgers with parents of girlfriend) Not sure about that boy. Olivia got a better offer to stay at the pool and dine country club style. But despite the no shows, the rest of the family enjoyed it very much and even said thank you. It was so worth the effort!
See Ya.
